There is an easy way to handle this situation. Put the dremel into a tool stand holder so it is facing the way you want the dust to fly. Then you have both hands free to guide your parts for shaping.

It's only "easy" if you have a tool stand holder.
I've actually had this site bookmarked for ages now.
Some day....

And... when I'm doing a walking stick, I need to be mobile. Tool AND big long 6' stick. I spin both around all over. Not like doing some little sculpture.
I saw a better (also home made) stand at a wood workers show once. Just a table with a hole cut out of the top, heavy screen over that, and a big hawnkin powerful motor sucking all the stuff down into the hole. I want one of those!
Dremel..... you folks should make something like this. More people at that show were asking that carver about his dust stand than his ducks.

I made a quick and easy dust collection table out of a Rockler table top dust collection fitting. It looks like a hopper shape and is made from black ABS plastic. Hook a shop vacuum or dust collection unit to it and place it behind the part you are carving.
